Food

I eat on a very strict budget. But I also try to eat as healthy as possible. I would say that about 75% of my weekly groceries are produce. Being on such a strict budget makes it pretty difficult to make fancy meals with a bunch of ingredients, so I typically stick to one of my staple meals. Here are some ideas.

Breakfast:

  • Banana with peanut butter
  • or 2 scrambled eggs
  • or Banana pancakes (1 banana + 1 egg + cinnamon)
  • or Avocado
  • or Plain Greek yogurt with fruit
  • or Oatmeal
  • with coffee or tea

Lunch

  • Spinach salad with craisins, walnuts, bleu cheese, balsamic vinaigrette
  • or sandwich on whole wheat bread with ham, cheese, veggies, mustard
  • Piece of fruit (e.g. apple, peach, plum)
  • Cucumbers, carrots, or cheese stick

Snacks

  • Carrots with hummus
  • Sliced ham wrapped around a cheese stick
  • Dried fruit
  • Orange juice
  • Red pepper

Dinner

  • Chicken breast (boneless, skinless) or pork chops
  • Veggies, steamed or stir-fried (asparagus, broccoli, zucchini, onion, tomato, snow peas)
  • Rice or pasta
  • Edamame
  • Lentils
  • Beans

As you can see, I eat pretty simply and don’t have too many options. The important thing is to eat lots and lots of fruits and veggies and eat as much protein as possible. I do my best to avoid processed foods and unnatural ingredients as well.
